Drain a can of chickpeas. Rinse them and add them to a bowl. Add firmly diced green onions, cucumbers, carrots, red capsicum and yellow capsicum. Squeeze in some lemon juice, add salt, dried herbs like rosemary, thyme and parsley. Give it a toss and sprinkle generously with some chopped coriander.

Tofu Veggie Stir-fry

You will need some extra-firm tofu for this recipe. Make sure to squeeze out the water and dry it using a kitchen towel. Now dust your tofu with some cornflour and pan fry it in sesame oil till crispy.  In a wok, stir fry vegetables like carrot, beans and capsicum. Add soy sauce, ginger and a dash of maple syrup. Add some cornstarch slurry to thicken the mix.  Finally put in the crispy fried tofu, give a mix and garnish with some green onions and sesame seeds.

Rice Pudding

Cook some rice with lemon zest till soft. Add in some almond or walnut milk and simmer it on a gentle heat. Add some sugar and stir it. You can replace sugar with maple syrup and stir in some toasted nuts and coconut for an extra crunch effect. Substitute coconut milk and add in some mangoes for a very tropical pudding. Chill and enjoy.
